Cheesecake and chocolate, together at last - chocolate lovers rejoice! Ideal for entertaining.

Cost Per Serving: 3.46

Ingredients

  • 2 cups (500 ml) chocolate wafer crumbs
  • 1/4 cup (60 ml) butter, melted
  • 2 — 8 oz (250 g) blocks light cream cheese, softened
  • 1 cup (250 ml) white sugar
  • 1 Tbsp (15 ml) Epicure’s Vanilla Extract
  • 5 eggs
  • 3/4 cup (180 ml) light sour cream
  • 1/4 lb (125 g) Epicure’s Dark Belgian Chocolate, melted

Instructions

1. Preheat oven to 350° F (175° C).
2. Mix together chocolate wafer crumbs and butter. Press into bottom of a 9" (23 cm) springform pan. Bake for 5 minutes, then remove. Reduce heat to 325° F (160° C).
3. Beat cream cheese with sugar until smooth. Add Vanilla Extract. Add eggs, one at a time, beating well after each addition. Add sour cream and beat to form a smooth batter. Stir in Dark Belgian Chocolate.
4. Pour over baked crust. Bake at 325° F (160° C) for 40-50 minutes.
5. Remove from oven and let cool to room temperature. Refrigerate overnight in pan.
6. To serve, remove the outside ring and place cheesecake on a plate. Top with fresh or defrosted frozen raspberries and a drizzle of Epicure’s Chocolate Truffle Sauce, if desired (find recipe online).
7. For best results when serving, always use a clean, wet knife for each slice of cheesecake.

All foods fit into a healthy lifestyle. It's portion control and frequency that are key.

Tips: Chef Tip: Place a pan of cold water in the bottom of the oven while the cheesecake bakes. This will help promote even baking and prevent the cake from cracking.

Serving Suggestion: Try using Epicure’s Chocolate Truffle Sauce as a garnish. Generously spoon sauce over cheesecake slices.

Epicure’s Fruity Tiramisu Pizza

Prep Time: 10 minutes

Cook Time: 3 - 5 minutes

Ingredients

  • 1 recipe Epicure’s Basic Pizza Dough, prepared and divided
  • 1 — 8 oz (250 g) container spreadable light cream cheese

2. Stir cream cheese with Epicure’s Tiramisu Dessert Dip Mix in a small bowl. Set aside.
