My family LOVED this recipe!

Epicure's Chicken and Cheese Quesadillas

A warm and cheesy recipe made in less than 15 minutes!

Cost Per Serving: $3.59

Ingredients

  • 1 cup (250 ml) cooked chicken, cubed
  • 1 recipe Epicure’s Poco Picante Salsa, prepared
  • 2 cups (500 ml) grated low-fat cheese
  • 1 green pepper, diced
  • 12 — 6" (15 cm) whole-wheat tortilla wraps
  • 2 Tbsp (30 ml) Epicure’s 3 Onion Dip Mix

Instructions

1. Preheat oven to 400° F (205° C).
2. Combine first 4 ingredients together in mixing bowl.
3. Lay 6 tortillas on a Epicure's Parchment-lined baking sheet.
4. Divide mixture between tortillas, spreading to within 1/2" (1.2 cm) of edge. Sprinkle each with Epicure's 3 Onion Dip Mix.
5. Top with another tortilla. Bake for 10 minutes, or until cheese is melted.
6. Cut into wedges and serve with prepared Epicure's Salsa or Epicure's Guacamole for dipping.

Try This Yummy Recipe!

Epicure’s Fruity Tiramisu Pizza

A fruity dessert pizza with 3 grams of fill-you-up-fast fibre per serving. A great way to get your kids to eat more fruit, especially when they help make it!

Prep Time: 10 minutes

Cook Time: 3 - 5 minutes

Ingredients

  • 1 recipe Epicure’s Basic Pizza Dough, prepared and divided
  • 1 — 8 oz (250 g) container spreadable light cream cheese
  • 2 Tbsp (30 ml) Epicure’s Tiramisu Dessert Dip Mix
  • 2-3 bananas, sliced
  • 4 cups (1 L) sliced strawberries
  • 1/4 cup (60 ml) Epicure’s Easy Chocolate Syrup recipe, prepared

Instructions

1. Form Epicure’s Basic Pizza Dough into 2 — 14” (35 cm) pizza shells.
2. Stir cream cheese with Epicure’s Tiramisu Dessert Dip Mix in a small bowl. Set aside.
3. Grill Epicure’s Basic Pizza Dough shells on the barbecue over medium-high heat with lid closed for 3–5 minutes, turning often, until puffy. Alternatively, grill store-bought shells for about 30–45 seconds, until golden with grill marks on bottom.
4. Remove crusts from grill. Immediately spread each with cream cheese mixture (it will melt slightly over crusts). Divide fruit overtop and drizzle with Epicure’s Easy Chocolate Syrup.
5. Slice into wedges and serve.

Tips: Flavour Changer: For a choco-peanut butter pizza like no other, mix velvety-rich Epicure’s Pure Cocoa with all-natural peanut butter. Spread on crust and top with sliced bananas.
